Do not use a mixer! Combine the eggs, flour, sugar, oil, nuts, apples, soda, salt, 1 teaspoon vanilla, and cinnamon in a large bowl. Mix the cake ingredients using a spoon. The batter will be stiff. Spread batter into a 13x9 pan. Bake for 45 to 60 minutes. Cool. Mix the cream cheese, butter, vanilla, and powdered sugar. Spread over cake. Serve. Variation: Serve cake warm with cool whip or ice cream instead of frosting.
