Grandpa Steve's Zucchini

This is one of our
grandson's (clayton) special requests. He calls it "grandpa's zucchini
cake" - geri.
3 Eggs

1/2 Cup Apple Sauce
|
1 1/2 Cup Sugar
|
2 Cups Zucchini, Grated, Well
|
2 Teaspoons Vanilla
|
-Drained
|
1/4 Teaspoon Baking Powder
|
2 Cups Flour, Sifted
|
3 Teaspoon Cinnamon
|
2 Teaspoons Baking Soda
|
1 Cup Raisins
|
1 Teaspoon Salt
|
1/2 Cup Vegetable Oil
|
1 Cup Walnuts, Chopped, Optional
|
Beat eggs lightly and stir in
oil, applesauce, sugar, zucchini, and vanilla. Sift dry ingredients together
and stir into egg mixture until well blended. Stir in raisins and nuts. Put in
well-greased loaf pan (8x5x3), bake at 375 degrees for one hour. Cool on rack
for 10 minutes before removing from pan.
Note: I didn't have an 8x5x3 loaf pan, so I made 2 smaller loaves. - Peggy
