Maple Date Pecan Cookies

1 Cup Brown Sugar

1/2 Teaspoon Salt

3/4 Cup Butter, Softened

1 Cup Finely Chopped Dates
|
1 Egg, Beaten
|
1/2 Cup Chopped Pecans
|
1/2 Teaspoon Vanilla Extract
|
3 Cup Confectioners Sugar
|
1/2 Teaspoon Maple Extract
|
3 Tablespoon Milk
|
1 1/2 Cup Flour
|
3 Tablespoon Butter, Softened
|
3/4 Teaspoon Baking Powder
|
3/4 Teaspoon Maple Extract
|
3/4 Teaspoon Baking Soda
|
60 Pecan Halves
|
Preheat oven to 350 degrees.
In a large bowl, beat 1 cup brown sugar and 3/4 cup butter until light and
fluffy.
Add vanilla extract, 1/2 teaspoon maple extract, and egg. Blend well.
Stir in flour, baking powder, baking soda, and salt. Mix well.
Stir in dates and chopped pecans.
Shape dough into 1 inch balls. Place dough 2 inches apart on ungreased cookie
sheets.
Bake for 9 to 12 minutes or until light golden brown.
Transfer cookies to a rack to cool.
In a small bowl combine the confectioners sugar, milk, 3 tablespoons butter,
and 3/4 teaspoon maple extract to make a frosting.
Spread the frosting on the cooled cookies and top each cookie with a pecan
half.
